Tortilla Pie
3 Whole Wheat Tortillas
½ cup Refried or Whole Black
Beans or any beans of your choice
¾ cups Grated Cheddar and
Monterey Jack Cheese
Toppings: Chopped Tomatoes, Bell Pepper, Onion, Cilantro, Jalapenos, Olives, Avocado, Sour Cream, Salsa, or anything else you may want on your pie.
Preheat oven to 350 degrees. Fire all three of the tortillas until crisp. On a cookie sheet, place one of the tortillas and cover with one third of any ingredients that can be heated such as the beans, cheese, and salsa. You may also want to add cooked chicken or beef. Cover with a tortilla and repeat the layer 2 more times. Bake until cheese is melted, then garnish with all of the vegetables and cut into pie-shaped wedges.
