Healthy Maple Shortbread

1 cup Unsalted Butter, at room temperature
1½ cups firmly packed Light Brown Sugar or Maple Sugar
1 teaspoon Vanilla
2 cups sifted Whole Wheat Pastry Flour
Preheat oven to 350°.
Hand mix all ingredients in a large bowl.
Spray a nice short bread pan or small pie plate with olive oil spray and pat dough into it in an even layer. Pierce the surface decoratively with the tines of a fork. Since the shortbread will become firm and crisp when it cools, before baking, score the top without cutting all the way through the dough so that it can be broken apart into serving pieces.
Bake in the upper third of the oven for about 20 to 30 minutes, or until the top is puffed and lightly browned.
