Salmon Cakes

Salmon Cakes
Approximately 4 lbs baked or poached Salmon
1/2 cup good quality Mayonnaise
1/8 cup Teriyaki Sauce with Ginger
2 tablespoons Dill Weed
3 Eggs
2 teaspoons Garlic Salt (more or less)
1/2 cup Oat Bran
1/8 cup Oat Flour
1/2 cup Olive Oil


Pull the bones from the salmon and shred into a bowl.  Add the mayonnaise, teriyaki sauce with ginger, dill weed and eggs.  Mix all ingredients well.  Add garlic salt to taste.
 
Form patties, the size of good size hamburger, patting the sides. Combine the oat bran, oat flour and garlic salt (to taste) in a bowl and dip the patties into the mixture.

Pour 1/2 cup olive oil into a large skillet and heat.  Add patties and brown one side.  Turn only once.  Brown second side and devour—Yum, Yum!  These delicious Salmon Patties are even great cold.
