Healthy Pizza Dough

Pizza Dough1½ teaspoons Active Dry Yeast
1¼ cups luke warm Water
1 teaspoon Sugar or Maple Syrup
3 teaspoons Kosher Salt
2 tablespoons Extra-Virgin Olive Oil
1¾ cups Whole Wheat Pastry Flour
1¾ cups Oat Flour

Place yeast in a bowl with ½ cup luke warm water and one teaspoon of sugar or maple syrup. Let yeast bloom for a few minutes.

In a bowl stir together 2½ cups of flour and the salt.  Add the yeast mixture, oil and rest of the water.  Mix with mixer or by hand very well.  If you have a mixer with a dough hook, this would be the time to use it.  Turn mixer on and add remaining ingredients slowly.  Dough should be pliable and elastic.  This takes about 10 minutes.

Shape dough into 4 balls.  Place the balls on a lightly floured plate, cover with plastic wrap and let rest for 15 minutes.

Roll out and add yummy stuff!
