8 Hard-boiled Eggs, chopped well
¼ cup Saffola Mayonnaise or Vegenaise
1 tablespoon Sweet Pickle Relish
3 stalks Celery, finely chopped
1 whole Sweet Onion, finely chopped
2 teaspoons Yellow Mustard
Salt & Pepper to taste
Mix well and spread a thick layer on good quality sprouted wheat bread or your bread of choice.
