Creamy Cauliflower Soup
2 Cauliflower heads, chopped
1 Maui Sweet Onion, chopped
2 stalks Celery, chopped
1 cup Parsley, minced
4 to 6 cups Chicken Broth,
or enough to cover cauliflower
2 Garlic Cloves, minced
1 cup Heavy Cream
1 cup shredded Cheddar Cheese
Salt & Pepper to taste
In a large pot over medium heat, simmer cauliflower, onion, garlic, celery and parsley in chicken broth until soft.
Blend in a blender being careful not to put too much hot soup in the blender. You can blend half of the soup if you like chunky soup. Add the cream, cheese, salt, and pepper to taste.
Don’t over heat the soup once cream and cheese are added. This is a delicious soup and will stick to your ribs. It is very low in carbs. |
