Dianne's Recipes

2 heads of chopped Cauliflower
1 chopped Onion
1 cup of minced Parsley
4 to 6 cups of Chicken Broth, or enough to
cover cauliflower
2 minced cloves Garlic
1 cup Whipping Cream
1 cup shredded Cheddar Cheese
Salt and Pepper to taste
In a large pot, simmer cauliflower, onion, garlic, and parsley in chicken broth until soft.
Blend in a blender being careful not to put too much hot soup in the blender. You can blend half of the soup if you like chunky soup. Add the whipping cream, cheese and salt and pepper to taste.
Don’t over heat the soup once cream and cheese are added. This is a delicious soup and will stick to your ribs. It is very low in carbs.  |
