Cabbage and Mushroom
Soup
1 whole Sweet Onion, finely chopped
2 to 3 types of Cabbage, finely chopped
1 whole bunch of fresh Parsley, finely chopped
3 cloves of Garlic, minced
1 can Tomato Sauce
Garlic Salt and Pepper to taste
1 tablespoon of Honey
4 to 7 cups Organic Chicken
Broth (enough to cover cabbage)
1/2 pound sliced Mushrooms
Place all ingredients, except mushrooms, in a soup pot and simmer until cabbage is soft.
Blend 2/3 of soup until pureed. Back on the stove, add mushrooms and warm until they are slightly cooked.
