Ancient Grain Bread
1 cup Sorghum Flour
1/4 cup Brown Rice Flour
1/4 cup White Rice Flour
1/2 cup Potato Starch
1/4 cup Cornstarch
1/4 cup Milled Golden Flax Seed
2 1/2 tsp Xanthan Gum
2 tsp Active Dry Yeast
1 tsp Sea Salt
2 Eggs
2 Egg Whites
1 cup Water or Milk
2 tbsp Vegetable Oil
Combine all dry ingredients.
In a mixer, combine all wet ingredients.
With mixer on low, add the dry ingredient mix. Scrape the sides and mix on medium for 4 to 5 minutes.
Pour into a 9 x 5 pan and let rise to the top of the pan (roughly 75 to 90 minutes.)
Bake at 350 degrees for about 40 minutes. Remove from pan, cool & slice.
